I actually prefer the Iceologer out of all three, because it actually feels a bit more interesting than a Mooshroom variant and a squid with an emissive texture that won't even do anything.
If they have it so that it only spawns rarely and/or only appears inside a rare structure like witches in huts, it could be a good hostile addition without ending up like the phantom where so many people despise it that the devs need to add an actual setting to remove them.
Honestly I'm just annoyed because there's no reason for it to be a vote. The first one had actual fleshed out mobs with unique designs and interesting behaviors. Here we just have a retextured mooshroom that'll probably just do something underwhelming, an illager that throws ice at you, and a squid that glows. All of which use recycled assets. But we gotta make players think they'll leave their mark so we'll make a vote even though these are so lazy we could add them all together...

Fabulous graphics fixes a lot of issues with transparency. Notice how particles can now actually render behind stained glass, and that transparent particles now layer properly with themselves and the clouds behind them.
Basically, it fixes the equivalent of Mine-imator's alpha glitches.

They'll detail new commands, but as far as json files are concerned, tough shit. We'll basically have to wait until the Gamepedia folks dissect the format to give us something.
