The bubbles coming off carbonated drinks is carbon dioxide. When this carbon dioxide dissolves in the fluid lining your throat it also forms carbonic acid, and so the burning sensation is the low pH reacting with pain receptors in your throat causing them to fire. This gives you the sensation of burning.
