The latest version of bedrock is a version of 1.16, which added all the nether update features.

The only change after 1.16's initial release would be the Piglin brutes, which are not in Mine-imator yet.

Mine-imator released shortly after 1.16, and an update hasn't come out since. 

In the large scope of things, Mine-imator does have all the blocks and mobs as the latest version of Bedrock, with an exception being the piglin brute (I may be wrong), but Mine-imator technically doesn't "support" either Bedrock or Java edition, besides the world importer, which only works for Java worlds.
