I will make a Minecraft Animation from the all 6 Star Wars movies.

I'm starting from Star Wars IV: A New Hope.

I think an animated lightsaber will be better but take longer.

It depends on how good you are at editing lightsabers into your videos. If you know it will look good, go for it! The rig though would probably be much easier and less of a hassle in things like fight scenes with the sabers.
