How and/or where can I get 1.16 assets?

So, how or where do I get Minecraft 1.16 assets? I saw someone post Minecraft 1.16 in the forums with Mineimator. Please don't downvote, again. Downvoting is not deserved

There are multiple 1.16 models on the forums. You can search for what you need.

Mine-imator 1.2.7 will also be coming out shortly with bugfixes and 1.16 assets.

There's almost never a release date for MI updates, they come out when they're ready.    This is no exception.

And to think I was going to ask in another area, glad I checked as this was my question also.

Does Mine-Imator, when you open it up and there is an update available does it give you a pop up like some other programs do? Or do you just have to watch the forums/website to know when an update is available? I've only used the program for a good month or so now so unsure how the updates work.

IIRC, Mine-Imator reminds you when you open it that a new version is released once it comes out.

Yes, there is a notification that tells you about new updates, and there's also a separate notification that asks you whether you want to download new Minecraft assets when they release.
