It isn’t. Somehow, when I shut the project down, the shadows changed.

This shadow is only possible by setting the shadow blur quality to 0 or having the lowest buffer sizes. Two things that should never happen.

Yeah, all of the shadows look extremely jagged. It seems your shadow blur radius is set to 0, as well as either buffer sizes being too small, or the sunlight range being too high.
