Which uses more RAM? Cubes or Items?

It shouldn't matter then. Though if possible, try using an item to combine some cubes as it reduces the amount of timelines.(Which saves RAM, and some FPS during animation playback.)

more faces = more RAM

if it's a 1x1 pixel item, it'll have the same amount of faces as a cube and therefore use the same amount of RAM. this would also apply to any other square items (2x2, 3x3, 4x4, etc.)
