How can I add armor on a mob

You'll have to look for a rig on this forums or ask someone to make one for you. Most people do rig commissions for free, it shouldn't be terribly hard to get some armor. I know there's also a few armor rigs on this site right now, I just don't know weather they're still up to date.

i know a trick in mine-imator that lets you add armor to mobs.

first you need to download or extract the minecraft data and go to the textures folder, there go to models and then to armor.

the "layer_1" named images contain the textures of the boots, chestplate and helmet. the "layer_2" images contains the leggings textures.

for the trick you need to go to workbench and then go to "create a single art from a mob or special block" an put human or a mob with the same scale of the human and go to browse texture and then open  the image depending the armor part you want to add, layer_1 if you want chestplate, boots or/and helmet or layer_2 if you want leggins.

then enter the part/s corresponding to the amour part you want: arms and body for chestplate, legs and body for leggins, legs only for boots and head only for helmet.

if you want to the armor move with the mob, you need to move in the timeline the armor parts to their corresponding mob parts.

here you have the armor moving with the mob.
