I want to create a video and post it on youtube. What if I download a map and edit it, is it a copyright?

I doubt anyone went through the effort of putting a license on their Minecraft map. Go for it. If you edit it as well it should be even better (that's not the same case for videos or songs though).

Unless you're gonna make a 3+ minute highly edited and well-animated video (in which case, use a better animation software,) nobody is gonna care.

It's not the program that makes a video low-quality, it's the user. An example would be this(it's animated in mine imator, and base your comments on animation quality rather than what the animation is about)
