I'm not sure if you move them with one of the buttons on the UV or by just holding down the mouse when you don't have one of the edges, but your mouse should turn into a four-sided arrow icon I think. Otherwise, YouTube might know more. I will send a more detailed answer once I'm home and can try this out for myself too!
As for option two, yeah, that's confusing. It takes a little time to get used to Modebench, and as I've said, I will give a more detailed version of my reply with screenshots and stuff as well!

So I tried method one and encountered this problem (unless its a trust the process thing), so when I edit the UV's it like "scales" the cube I selected, like when I shrink the UV down it shrinks the selected cube as well. it COULD be a trust the process thing but uhhhhhhh

Ok, I think what's happening is you have a lot of cubes that you just duplicated, scaled down and positioned. Because you used the same cube for each duplicate, they all use the same space on the texture. In order to change this there's two methods, one easier and one harder, although I'm not sure if the second method actually works or not.
For the first and harder method, you need to change the mapping in Modelbench. To do this, select a cube in the sidebar. Then, using crtl+e(or a similar keybind, I believe it was ctrl+e though), you can bring up the UV editor. Make sure that none of the cube model's uv Maps overlap and that they are all inside the texture(the white field with the grid).
And now, for the second method where I'm not sure if this works for .obj files in modelbench, you can do what the tutorial says up until the "Apply to untextured faces" step. Afterwards, click the left icon above the texture and make sure "box uv" is on. That should separate all the textures and you should have a paintable model!
As I've said, the second method is one I'm not sure about and I just made it up based on what I know about Modelbench and Blockbench. I can't test it since I'm not home until the end of the week, but make sure to tell me if these tips worked or not and where you found issues! I might be able to solve them for you!

So I downloaded the Continuation mod @mbanders gave us and now the option to keyframe the text is just gone completely????
